Healthy Snack Recipe: Kid Approved Energy Bites

The winter holidays are a time for friends, family, and FOOD.


Lots and lots of food.


I have made the below recipe multiple times and it’s always delicious!


Added bonus: it contains dates, which is a fruit high in fiber.


No-Bake Energy Bites

Ingredients:

10-12 Dates (pitted)

1/2 cup smooth unsweetened peanut butter or any other nut butter

3 tablespoons of unsweetened cocoa powder

Optional toppings:

Peppermint pieces or chocolate peppermint bark broken into small pieces

OR

Cinnamon

OR

Coconut flakes

OR

Cacao nibs or chocolate chips


Directions:

1. WASH YOUR HANDS :)

2. Place all of the ingredients (minus the toppings) in a food processor or blender.

3. Carefully take the "dough" and form into small balls. (Be mindful of the blade in your food processor or blender! I remove the blade from my food processor for this step to avoid any injuries.)

4. Add your toppings and place on a parchment paper lined cookie sheet.

5. Refrigerate for at least 1 hour prior to eating.

6. Enjoy!


Store these in the refrigerator for about 3-5 days for a yummy grab-and-go snack. Store them in the freezer for about 1-2 months.
